Arugula Sweet CornSalad


We eat a salad almost everyday at our house, here  is another favorite way we try to jazz things up.. I try to make small changes every time since as mentioned earlier we eat way too much of it at our home:)  it sure can get boring eating it the same way.. .
So I sautéed!!!!! yes that is right-  you heard me, sautéing:).
I sauté some onions in olive oil, then added mushrooms, scallions,  fresh corn, pink salt and pepper, then right before I turn of the stove some plum tomato, then I toss in some fresh crispy arugula and voilà!

You and the family are going to love this salad, people don’t realized that good old non-GMO corn is not only delicious but is also chockfull of nutrients,  it’s a good source of several nutrients, including thiamin (vitamin B1), pantothenic acid (vitamin B5), folate, dietary fiber, vitamin C, phosphorus and manganese. A cup of corn supplies 19 percent of the recommended daily dose of folate, and about a quarter of the daily value for thiamin. This combination of arugula and corn makes this a fiber rich meal. My kids can’t get enough of this salad.

Ingredients organic

  • 1 large ear of  FRESH non-gmo corn ( remove kennels from cob)
  • 6 ounces baby arugula, washed and spun dry
  • 2 tablespoons chopped scallions (about 2 scallions)
  • ½ cup sliced mushrooms ( I use what I have at home)
  • ¼ cup diced onions (1 small onion)
  • 1 small garlic clove, minced  (optional)
  • Sea salt and freshly ground pepper to taste
  • 2-3 tablespoons  extra virgin olive oil (I love olive oil, so you can use less)
  • 2 medium-size ripe tomatoes, cut in wedges

Instructions:

In a medium size skillet, heat oil, add onions and sauté until translucent starring constantly, about 2 minutes, add in garlic, mushroom, sweet corn and scallions, season with salt to taste and continue sautéing for about 2-3 more minutes. Turn off the stove and toss in your tomato wedges, then add your arugula and serve.

We don’t use additional salad dressing but you are welcome to add your favorite.
