Microgreens Omelette


Today for breakfast the boys are having micro greens omelet with a slice of homemade whole wheat toast.  If you ever need an easy homemade 100% whole wheat bread recipe that you can easily make with no fancy equipments check out my recipe,  you and the kiddos are going to have fun making it and enjoy the amazing taste.
Who else is into microgreens? I love the amazing health benefits it offers, this is one of our all time favorite food when we can afford to buy,  the good news is a little goes a long way. .
Did you know microgreens/sprouts have the highest concentration of nutrients per calorie of any food? They are the richest sources of vitamins, minerals, trace minerals, enzymes, antioxidants, chlorophyll and protein. If you are not already familiar with these nutritional powerhouse it is time to look it up.

Ingredients organic

2 happy eggs (pastured eggs)

2 tablespoons water

1/8 teaspoon salt

fresh ground black pepper  (optional, just a dash goes a long way)

1 teaspoon butter

Instructions

BEAT eggs, water, salt and pepper in small bowl until nice and frothy
HEAT butter in skillet over medium-high heat until hot, tilt to coat entire pan base.
POUR IN egg mixture. Mixture should set immediately if skillet is heated to temp.
GENTLY PUSH cooked portions from edges toward the center with spatula  so that uncooked eggs can reach the hot pan surface.
CONTINUE cooking, tilting pan and gently moving cooked portions as needed.
Egg is cooked when there is no visible egg liquid on top, place microgreens on one side of the omelet and fold over in half with help using the spatula.

Slide omelet into plate and enjoy immediately, you don’t want to cook the microgreens..
