Pumpkin Spiced Butternut squash pancakes

The adage we are what we eat is so true especially when it comes to our kids, so much of how they feel, look and act can be directly connected to the food they eat. Nutrition is a crucial part of our wellbeing and it is important that parents are encouraged and educated on the importance of the food they feed their families and the effect it has on their overall health. It is really not as complicated as it sounds, healthy foods = healthy kids.

Remember every little change goes a long way, today let’s commit to taking refined flour of the everyday diet of our kids, refined flour is such a problematic food linked to so many diseases and it is that food a lot of our kids eat daily (bread, pancakes, muffins, waffles etc). Studies show the risk of diabetes, heart disease, stroke, obesity and cancer can be greatly reduce through the simple act of changing from refined to wholesome flour.  If you and your family are already hooked on refined bleached white flour here is a delicious wholesome recipe to get you and your family to enjoy delicious pancake that taste good in the mouth, good in the tummy and good for your health..

Ingredients organic

2 pastured eggs (beaten)

½ cup milk

½ tsp pumpkin spice

1 ½ tsp baking powder

1/8 tsp sea salt

¼ tsp nutmeg (or vanilla)

1 pouch of Yummy Spoonfuls  butternut squash (to add moisture)

1 ½ cup wholewheat flour

coconut oil for the griddle .


– In a medium size bowl whisk together eggs, milk and  defrosted butternut squash.

– In large bowl whisk all dry ingredients: baking powder, pumpkin spice, salt, nutmeg and flour until well combine.

– Add the egg mixture into the dry ingredients and mix until combine  (add more milk if you don’t like it too thick)

-Heat a large cast-iron pan or griddle over medium heat, drizzle with coconut oil,  ladle ¼ capfuls of batter into the pan and cook until  lightly brown on the bottom, there will be holes on the top showing it is ready to flip, on medium heat this should take about 3 minutes, flip and cook the other side, remove and set aside, repeat until all is cooked, server warm with your favorite topping.


Mix together until creamy-

1 tablespoon peanut butter

1 tablespoon grade b maple syrup
